During this period of social isolation, it is so challenging as a home baker to have lots of time on my hands, but few people to share my goodies with.

Small Batch Bakes are a growing collection of some of my favourite recipes, adjusted to yield small quantities to avoid overflowing freezers (or worse, having to throw out baked goods!!!).

Anzac Biscuits | Small Batch Bake

Anzac recipe for bakers with limited sharing opportunities due to social isolation

Ingredients
  

  • 60 grams butter
  • 1 tbsp golden syrup
  • 1/3 cup self-raising flour
  • 1/2 tsp baking soda
  • 1/3 cup firmly packed brown sugar
  • 1/2 cup rolled oats

Method
 

  1. Melt butter in microwave for 30 seconds. If not melted, continue microwaving at 10 second intervals until melted.
  2. Add golden syrup to butter and mix thoroughly
  3. Mix in flour, baking soda, brown sugar and rolled oats. Use a spatula to ensure all ingredients are mixed completely
  4. Roll into balls – approximately 3cm in diameter and place on lined tray. Press down each biscuit slightly.
  5. Bake in oven at 180 degrees for 8-10 minutes fan-forced (10-12 minutes non fan-forced) or until lightly browned.
  6. Remove from oven and allow to cool.
  7. Serve for afternoon tea with a cup of tea or coffee or dessert with vanilla bean gelato.
